These bakery-style blueberry muffins with crumbly streusel topping are soft, moist, and packed with flavor. An easy recipe perfect for breakfast or brunch!

Ingredients

Scale
  • 2 C Flour
  • 2 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 C Sugar
  • 1/2 C Butter, melted then cooled to room temp
  • 2 Lg Eggs
  • 1 tsp Vanilla
  • 3/4 C Buttermilk
  • 1 3/4 C Fresh Blueberries

Streusel Topping

  • 4 TBSP Butter, melted
  • 1/2 C Flour
  • 1/3 C Granulated Sugar

Instructions

  1. Preheat oven to 375°F
  2. Line cupcake pan with liners
  3. In a small bowl, sift together the flour, baking powder, salt and set aside.
  4. In a medium bowl, mix together butter, sugar, eggs vanilla and buttermilk until combined.
  5. Fold the flour mixture into the wet ingredients with a rubber spatula until just combined.
  6. Add the blueberries and mix until evenly dispersed.
  7. Fill 1/2 of the way with batter and top with streusel topping (about a tablespoon or more)
  8. Bake for 18 – 20 mins or until tops are golden brown and top springs back when pressed.
  9. Allow to cool on a wire rack and ENJOY!
