Bakery-Style Blueberry Muffins with Streusel Topping (Easy & Moist!)

These bakery-style blueberry muffins with crumbly streusel topping are soft, moist, and packed with flavor. An easy recipe perfect for breakfast or brunch!

Ingredients

- 2 C Flour
- 2 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1 C Sugar
- 1/2 C Butter, melted then cooled to room temp
- 2 Lg Eggs
- 1 tsp Vanilla
- 3/4 C Buttermilk
- 1 3/4 C Fresh Blueberries
Streusel Topping
- 4 TBSP Butter, melted
- 1/2 C Flour
- 1/3 C Granulated Sugar
Instructions
- Preheat oven to 375°F
- Line cupcake pan with liners
- In a small bowl, sift together the flour, baking powder, salt and set aside.
- In a medium bowl, mix together butter, sugar, eggs vanilla and buttermilk until combined.
- Fold the flour mixture into the wet ingredients with a rubber spatula until just combined.
- Add the blueberries and mix until evenly dispersed.
- Fill 1/2 of the way with batter and top with streusel topping (about a tablespoon or more)
- Bake for 18 – 20 mins or until tops are golden brown and top springs back when pressed.
- Allow to cool on a wire rack and ENJOY!
