- Filling:
- 8 Fresh Peaches (peeled, pitted, thinly sliced)
- 1/4 C White Sugar
- 1/4 C Brown Sugar
- 2 tsp Vanilla
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tsp fresh lemon
- 2 tsp Cornstarch
Crust Topping:
- 2 C Flour
- 1/2 C White Sugar
- 1/2 C Brown Sugar
- 2 tsp Baking Powder
- 1 tsp Salt
- 12 tbsp very cold salted butter (cut into small cubes)
- 1/3 C Boiling Water
Sugar Topping:
- 3 tbsp White Sugar
- 1 tbsp Brown Sugar
- 1 tsp Cinnamon
Instructions
- Pre-heat oven to 400°F
- Peel, pit and slice peaches and place in a large bowl.
- Combine sugars, cinnamon, vanilla , nutmeg, vanilla, lemon juice and cornstarch until well combined.
- Spray a 9×13” baking dish with non stick spray and pour fruit mixture into it.
- If peaches are very firm place the peach mixture into the oven for 10 minutes to let them soften.
- In a medium sized bowl combine flour, sugars, baking powder, salt and stir with a whisk.
- Cut the butter into small cubes and add to the flour mixture.
- Using your hands or a pastry blender and mix the butter in until they are pea sized lumps.
- Boil the water and slowly add to flour mixture combining as you add. Form a non sticky dough.
- Remove peaches from oven (if needed to cook) and set aside.
- Break small pieces of the dough and drop over the peach mixture until evenly covered.
- Combine sugar mixture in a small dish and evenly sprinkle over the top of the dough.
- Place in oven for about 35 mins, until browned on top. I love mine more brown than others so do it how you like it.
- Serve by itself or with vanilla ice cream and a drizzle of caramel syrup and ENJOY!
Notes
Alberta peaches are the best, in my opinion!
You may also use canned peaches and it still turns out amazing!
