Ingredients

Units Scale
  • 2 C Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 tsp Cinnamon
  • 1/2 tsp Ginger
  • 1/2 tsp Nutmeg
  • 1 tsp Salt
  • 2 Tbsp Corn Starch
  • 1 C Butter, melted then cooled
  • 1 C Sugar
  • 3/4 C Brown Sugar, packed
  • 4 Eggs, room temperature
  • 1/2 C Buttermilk, room temperature
  • 1 Tbsp Vanilla
  • 3 C Carrots, finely shredded

For the Frosting

  • 8 oz Cream Cheese, room temperature
  • 1/2 C Butter, softened
  • 2 1/2 C Powdered Sugar, sifted
  • 2 tsp Vanilla

Instructions

For the Cake

  1. Pre-heat oven to 350°F
  2. Grease and dust with flour two 9” cake pans and set aside.
  3. Sift together flour, cinnamon, nutmeg, ginger, baking powder, baking soda and salt and set aside.
  4. Mix together buttermilk and vanilla and set aside.
  5. Melt butter and allow to cool, then combine with sugars.
  6. Add eggs one at a time, mixing between additions.
  7. Add half of the flour mixture and mix until it is just combined.
  8. Add buttermilk mixture and mix until it is just combined.
  9. Add the remaining flour mixture and mix until it is just combined.
  10. Add carrot and mix.
  11. Evenly divide between the two prepared pans.
  12. Place in the pre-heated oven for 40-45 mins, checking at the 38 minute mark.  Cake is finished when toothpick comes out clean.

For the Frosting

  1. Cream together butter and cream cheese.
  2. Add powdered sugar and vanilla and mix until light and creamy.

Notes

I will sometimes line the bottom of the cake pan with parchment paper to ensure the cake doesn’t stick to the bottom of the pan
