- 2 C Flour
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 2 tsp Cinnamon
- 1/2 tsp Ginger
- 1/2 tsp Nutmeg
- 1 tsp Salt
- 2 Tbsp Corn Starch
- 1 C Butter, melted then cooled
- 1 C Sugar
- 3/4 C Brown Sugar, packed
- 4 Eggs, room temperature
- 1/2 C Buttermilk, room temperature
- 1 Tbsp Vanilla
- 3 C Carrots, finely shredded
For the Frosting
- 8 oz Cream Cheese, room temperature
- 1/2 C Butter, softened
- 2 1/2 C Powdered Sugar, sifted
- 2 tsp Vanilla
Instructions
For the Cake
- Pre-heat oven to 350°F
- Grease and dust with flour two 9” cake pans and set aside.
- Sift together flour, cinnamon, nutmeg, ginger, baking powder, baking soda and salt and set aside.
- Mix together buttermilk and vanilla and set aside.
- Melt butter and allow to cool, then combine with sugars.
- Add eggs one at a time, mixing between additions.
- Add half of the flour mixture and mix until it is just combined.
- Add buttermilk mixture and mix until it is just combined.
- Add the remaining flour mixture and mix until it is just combined.
- Add carrot and mix.
- Evenly divide between the two prepared pans.
- Place in the pre-heated oven for 40-45 mins, checking at the 38 minute mark. Cake is finished when toothpick comes out clean.
For the Frosting
- Cream together butter and cream cheese.
- Add powdered sugar and vanilla and mix until light and creamy.
Notes
I will sometimes line the bottom of the cake pan with parchment paper to ensure the cake doesn’t stick to the bottom of the pan
