Chicken Tortilla Soup Recipe: A Delicious Mexican Dish

Ingredients

  • 2 Chicken Breasts, cooked and either shredded or diced.
  • 1/2 of a yellow onion, diced and set aside.
  • 2 TBSP Olive Oil
  • 4 garlic cloves, minced and set aside. (2 tbsp minced garlic from a jar)
  • 6 C Chicken Stock
  • 116 oz can of Petite Diced Tomatoes
  • 116 oz can of black beans
  • 116 oz can of Sweet Whole Kernel Corn
  • 12 oz can of Hot Green Chili or diced jalapeños
  • 2 tsp cumin
  • 2 tsp Gerhart Chili Powder
  • 1 TBSP Garlic Salt (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 bunch FRESH cilantro, diced and set aside.
  • Salt and pepper to taste

Garnish

  • Fresh Cilantro
  • Shredded Cheese
  • Lime Juice
  • Tortilla strips or Tortilla Chips

Instructions

  1.  In a fry pan, add olive oil, diced onion, and minced garlic, cook on medium heat until translucent and fragrant.  Do not burn the garlic.  Remove from heat and set aside.
  2. In a large pot, add chicken stock, cooked onion and garlic, corn, black beans, green chilis, tomatoes, and seasoning.  Do not add the cilantro until 10 minutes before serving.
  3. Bring to a boil, then turn heat to medium-low heat.  Allow to simmer for at least 30 minutes, so the flavors can meld together.
  4. Add cooked, diced chicken, simmer for 10 more minutes.
  5. Add 1 bunch diced cilantro, simmer for 5-10 minutes more.
  6. Serve in a bowl, topped with cheese, pinch of fresh cilantro, lime juice and tortilla chips/strips.
