Chicken Tortilla Soup Recipe: A Delicious Mexican Dish

- 2 Chicken Breasts, cooked and either shredded or diced.
- 1/2 of a yellow onion, diced and set aside.
- 2 TBSP Olive Oil
- 4 garlic cloves, minced and set aside. (2 tbsp minced garlic from a jar)
- 6 C Chicken Stock
- 1 – 16 oz can of Petite Diced Tomatoes
- 1 – 16 oz can of black beans
- 1 – 16 oz can of Sweet Whole Kernel Corn
- 1 – 2 oz can of Hot Green Chili or diced jalapeños
- 2 tsp cumin
- 2 tsp Gerhart Chili Powder
- 1 TBSP Garlic Salt (optional)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 bunch FRESH cilantro, diced and set aside.
- Salt and pepper to taste
Garnish
- Fresh Cilantro
- Shredded Cheese
- Lime Juice
- Tortilla strips or Tortilla Chips
Instructions
- In a fry pan, add olive oil, diced onion, and minced garlic, cook on medium heat until translucent and fragrant. Do not burn the garlic. Remove from heat and set aside.
- In a large pot, add chicken stock, cooked onion and garlic, corn, black beans, green chilis, tomatoes, and seasoning. Do not add the cilantro until 10 minutes before serving.
- Bring to a boil, then turn heat to medium-low heat. Allow to simmer for at least 30 minutes, so the flavors can meld together.
- Add cooked, diced chicken, simmer for 10 more minutes.
- Add 1 bunch diced cilantro, simmer for 5-10 minutes more.
- Serve in a bowl, topped with cheese, pinch of fresh cilantro, lime juice and tortilla chips/strips.
