Ingredients

  • 3 C Warm water
  • 1 1/2 TBSP Dry active yeast
  • 2 Lg Eggs
  • 1/2 C Butter, softened (1 stick)
  • 1/2 C Sugar
  • 1/2 C Dry milk
  • 1/2 C Potato flakes
  • 1 TBSP Salt
  • 56 C All purpose flour

  • 1 C Butter, melted
  • 1 C Light Brown Sugar
  • 1/2 C Granulated Sugar
  • 4 TBSP Cinnamon

Thick Cream Cheese Frosting

  • 8oz Philadelphia Cream Cheese
  • 6 TBSP Butter
  • 2 tsp Vanilla
  • 1 C Powdered Sugar, sifted

Instructions

For the Dough:

    1. If you have a dough mixer, like a Bosch mixer, use that and follow the same instructions.
    2. In a large bowl, combine warm water and dry yeast.  Let sit for 5 mins until mixture is active.
    3. Add in butter, eggs, sugar, powdered milk, potato flakes, and salt.
    4. Mix well. Then, add 3 cups of the flour and mix with a mixing spoon.
    5. Next, use your hands to complete mixing the dough together.
    6. After everything is mixed well, continue to add one cup of flour at a time until the mixture forms dough.  It will be slightly sticky.
    7. In a separate large mixing bowl, add about 2-3 TBSP of oil (I use canola oil or whatever is on hand) and coat the mixing bowl.
    8. Place the dough in the oil coated bowl, cover with a clean towel and let rise for about 25 minutes.  Punch down the dough and let rise again for the same amount of time.

    Assembling the Cinnamon Roll:

    1. Clean a portion of your countertop and dust it with flour to ensure the dough doesn't stick.
    2. Take the dough and place it on the floured countertop.
    3. Roll the dough, using a rolling pin, in a rectangle shape that is about 1/4″ – 1/2″ thick.
    4. Melt 1 cup of butter and spread it evenly over the dough, leaving about 1/2″ around the edge of the dough with no butter.
    5. Next, evenly sprinkle 1 cup of brown sugar, 1/2 cup granulated sugar and 4 tablespoons of cinnamon. You can use more of these ingredients if you would like, just make sure you evenly cover the dough.
    6. Starting at a long end of your dough, take your time to roll the dough tightly as you can towards the other end of your rectangle of prepared dough.
    7. When dough is rolled, pinch the dough together to make it stay.
    8. Use a long piece of thread, slide it under the rolled up dough, bring the thread up, cross the strings and pull tight. This will cut the roll with out flattening it. Alternatively use a sharp knife and slice the roll into even pieces.
    9. Place each roll on a greased cookie sheet 2″-3″ apart.
    10. Let rise for 15 minutes before placing them in the oven.
    11. Bake at 350°F for 20 minutes or until slightly golden brown.
    12. Remove from oven and allow to cool

For the Icing

  1. In a medium sized bowl, mix cream cheese and butter until creamy.
  2. Add sifted powdered sugar and vanilla and beat until creamy.
  3. Spread over mostly cooled cinnamon rolls and ENJOY!

Notes

  • Cooking time could vary. Start checking on them at the 18 minute mark. I love them slightly golden browned on the tops.
  • If they are getting too brown on the top but you find the dough isn't cooked all the way, place a piece of tin foil over the top to omit any more browning until they are cooked through.
