Indulge in the warm, comforting flavors of homemade cinnamon swirl sourdough bread. This easy recipe combines the tangy goodness of sourdough with a sweet cinnamon swirl, creating the perfect loaf for breakfast or a cozy treat!

Ingredients

Pre-Ferment

  • 1 1/2 C Sourdough Starter
  • 2 C Milk, room temperature
  • 3 C Flour

Make the Dough

  • 1/2 C Butter, cut into cubes, room temperature
  • 3/4 C Sugar
  • 1 1/2 Tbsp Salt
  • 3 C Milkilk, room temperature
  • 910 C Flour

Cinnamon Mixture

  • 1 C Flour
  • 1 C Brown Sugar, packed
  • 2 Tbsp Cinnamon
  • 1/2 C Butter, melted

Instructions

  1. Feed your starter the night before and allow it to sit on the counter over night.
  2. In the morning, in your bread mixer (I use a Bosch mixer) combine the starter, 3 cups of flour and 2 cups of room temperature buttermilk.
  3. Mix for about a minute, until combined, stop the mixer and allow it sit in the mixer until it doubles in size, mine took about 5 hours to double.
  4. After it doubles, cut the butter into cubes and add it to the dough and turn on mixer for 30 seconds.
  5. Then add  sugar, salt, 3 cups of buttermilk and 5 cups of the flour.
  6. Mix on high for 10 minutes.
  7. Add 1 cup of flour at a time until the dough pulls away from the sides and the bottom of the mixing bowl.  Dough be slightly sticky but manageable.
  8. Oil a large mixing bowl, put the dough into the oiled bowl and cover with a dish towel or plastic wrap.
  9. Allow to raise in a warm area for 2-3 hours, until it doubles in size.
  10. Prepare the cinnamon mixture: In a small bowl combine flour, brown sugar, cinnamon, and melted butter until it becomes a crumb mixture and set aside.
  11. After it doubles, punch dough down, and place onto a clean counter surface.
  12. Divide dough into 4 equal pieces, shape into a flat rectangle and spread a quarter of the mixture and spread over the rectangle shaped dough, making sure that you don’t spread it all the way to the edge.  Leave about 2 inches.
  13. Fold the ends of the dough in to contain the cinnamon mixture and roll like a burrito.  
  14. Pinch the edge of the dough and place the edge face down into a greased bread pan.
  15. Cover the dough and allow to raise for another 2-3 hours in a warm place.
  16. After dough doubles, score the top of the loaf with a bread knife or razor blade to allow the dough more room for expansion when it cooks.
  17. Pre-heat oven to 375°F
  18. Bake for 30 minutes, until golden brown on top.
  19. Remove from oven and butter the top of the bread to keep the bread soft.
  20. Remove from the bread pans and transfer to a cooling rack to allow to cool and ENJOY!
