- 3/4 C Salted Butter Softened (1–1/2 sticks)
- 1 1/2 C Packed Light Brown Sugar
- 2 Large Eggs
- 2 tsp Vanilla
- 2 1/4 C Flour
- 1 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 1/4 tsp Ground Cinnamon
- 1/2 C Dried Cranberries – Chopped
- 6 oz White Baking Chocolate Chopped Coarsely
Frosting
- 8 oz Cream Cheese – Room Temperature
- 1 C Powder Sugar – Sifted
- 8 oz White Baking Chocolate Melted (reserve 2 oz for drizzle on top)
- 1/3 C Dried Cranberries, chopped
- 2 tsp Vanilla (can use clear vanilla)
Instructions
- Pre-heat oven to 350°F and prepare a 13×9″ baking pan with butter or non-stick spray.
- In a bowl sift to combine flour, baking powder, salt and cinnamon. Set aside.
- Melt the butter on the stove top on a medium heat setting, but do NOT boil.
- Pour butter into a medium mixing bowl and add the brown sugar. Combine and let sit until the mixture cools to room temperature (about 10 mins).
- After sugar mixture is cooled beat in eggs, one at a time and then vanilla.
- Gradually add the flour mixture to the butter mixture and combine well, the batter will be thick.
- Stir in the chopped white chocolate and chopped cranberries.
- Transfer to the prepared pan and spread evenly. I found it best to use my hands because the batter is so thick.
- Bake for 15-20 Minutes until tooth pick comes out clean.
- Cool completely before adding the frosting.
- To make the frosting:
- In a bowl, beat cream cheese until creamy. Sift in powered sugar and vanilla. Gradually add 6 oz of the melted white chocolate, beat until blended.
- Frost the bars and sprinkle cranberries and drizzle white chocolate over top and ENJOY!
