For the Cake Batter

  • 1 C Butter, softened
  • 3/4 C Sugar
  • 1 Lg Egg
  • 2 tsp Vanilla
  • 1 C Buttermilk
  • 2 C Flour
  • 2 tsp Baking Powder
  • Pinch of Salt

For the Filling

  • 1/3 C Brown sugar, packed
  • 1/3 C Flour
  • 3/4 Tbsp Cinnamon
  • 3 Tbsp Butter, Melted

For the Cinnamon Streusel Topping

  • 1/2 C Brown Sugar, packed
  • 3/4 C Flour
  • 1 Tbsp Cinnamon
  • 5 Tbsp Butter, melted

Instructions

For the Muffin Batter

  1. Pre-heat oven to 350°F
  2. In a large mixing bowl combine, softened butter and sugar and mix well.
  3. Add eggs and vanilla and mix
  4. Sift together flour, baking Powder and Salt.
  5. Alternate adding the buttermilk and flour mixture, starting and ending with the flour.  Set aside.

For the Filling and Topping

  1. In a small bowl combine the filling ingredients and mix together with a fork until butter is evenly distributed.
  2. Do the same with the topping ingredients in a separate bowl.

Assembly

  1. Line your cupcake pans with a cupcake liner or parchment paper squares.
  2. Put a tablespoon of batter into each cupcake liner, spread to cover the bottom of the liner.
  3. Add a tablespoon of filling over the batter, then top with another tablespoon of batter and spread to cover the filling.
  4. Lastly, top with a generous amount of topping.
  5. Should make about 24 muffins.
  6. Place in the oven for 18-20 minutes or until inserted toothpick comes out clean.
  7. Pull them out of the oven and ENJOY!
