For the Cake Batter
- 1 C Butter, softened
- 3/4 C Sugar
- 1 Lg Egg
- 2 tsp Vanilla
- 1 C Buttermilk
- 2 C Flour
- 2 tsp Baking Powder
- Pinch of Salt
For the Filling
- 1/3 C Brown sugar, packed
- 1/3 C Flour
- 3/4 Tbsp Cinnamon
- 3 Tbsp Butter, Melted
For the Cinnamon Streusel Topping
- 1/2 C Brown Sugar, packed
- 3/4 C Flour
- 1 Tbsp Cinnamon
- 5 Tbsp Butter, melted
Instructions
For the Muffin Batter
- Pre-heat oven to 350°F
- In a large mixing bowl combine, softened butter and sugar and mix well.
- Add eggs and vanilla and mix
- Sift together flour, baking Powder and Salt.
- Alternate adding the buttermilk and flour mixture, starting and ending with the flour. Set aside.
For the Filling and Topping
- In a small bowl combine the filling ingredients and mix together with a fork until butter is evenly distributed.
- Do the same with the topping ingredients in a separate bowl.
Assembly
- Line your cupcake pans with a cupcake liner or parchment paper squares.
- Put a tablespoon of batter into each cupcake liner, spread to cover the bottom of the liner.
- Add a tablespoon of filling over the batter, then top with another tablespoon of batter and spread to cover the filling.
- Lastly, top with a generous amount of topping.
- Should make about 24 muffins.
- Place in the oven for 18-20 minutes or until inserted toothpick comes out clean.
- Pull them out of the oven and ENJOY!
