Ingredients
- 1 C Seasoned Skillet Potatoes
- 1/2 C Green Chili
- 2 Egg, scrambled
- 1 oz Mexican Style Shredded Cheese
- 2 Tortillas
Instructions
- Follow and make the green chili recipe and set aside.
- Follow the link for the seasoned skillet potatoes and follow the directions in that recipe.
- In a small bowl break the eggs, add salt and pepper and whisk them together.
- Place whisked eggs in a small, greased fry pan and continue to stir until cooked to your level of firmness.
- Plate your skillet by layering the potatoes on the bottom, eggs in the middle, then pour chili on and sprinkle with shredded cheese.
- Serve with two warm tortillas and ENJOY!
Notes
-I usually only make this after I make the green chili burritos for dinner, so that way it is a simple breakfast because the chili takes about an hour to cook.
