For the Biscuits
- 4 C All Purpose Flour
- 2 Tbsp Baking Powder
- 1 1/2 tsp Salt
- 1 1/2 C Butter, frozen then grated
- 2 Tbsp Honey
- 2 C Buttermilk, very cold
Sausage Gravy
- 1 lb Hot Breakfast Sausage, I use Jimmy Dean Brand
- 1/3 C Flour
- 2 3/4 C Milk
- 1 C Heavy Whip Cream
- 1 1/2 tsp Beef Bouillon, I use Beef flavor Better than Bouillon paste
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1/2 tsp Dried Parsley
- 1/2 tsp Seasoning Salt
- 1/2 tsp Thyme
- 1/2 tsp Pepper
- 1/4 tsp Sage
- 1/4 paprika
- 1/4 Red Pepper flakes, or more to taste
Instructions
For the Biscuits
- Pre-heat oven to 425°F
- In a large mixing bowl, combine flour, baking powder and salt and mix until combined.
- Grate frozen butter and put into the flour, then toss to coat the grated butter with the flour mixture.
- Add honey and buttermilk and mix with a spoon until dough starts for form, dough will be very shaggy.
- Dust a clean countertop with flour and with your clean hands pour the dough on the counter and knead the dough about 10-15 times until it comes into a ball on the counter top.
- Then dust a rolling pin with flour and roll dough out to about 1″ thick.
- Fold the dough over itself into thirds, turn a quarter turn and roll the dough out until dough is about 1 1/2 inches thick.
- If you have a biscuit cutter, use that, I didn’t have one so I used a drinking glass to cut the dough.
- Dip the opening of the cutter or glass into flour before you press into the dough.
- Place each cut piece of dough into a cast iron skillet or 9×11″ baking dish. Evenly spread out the cut dough in the prepared dish and place in the oven.
- Cook for 20 minutes, baste with butter or honey butter and place back in oven for another 5 minutes.
- Biscuits will be golden brown when finished, baste again with melted butter or honey butter and set aside.
For the Spicy Sausage Gravy
- In a large sauce skillet, brown the sausage, do not drain.
- After sausage is browned, sprinkle in the flour to help soak up the fat from the sausage and use to create the thickness of the gravy.
- Warm the milk and cream in the microwave for 2 minutes and pour over the sausage and mix together, after a few minutes of constantly stirring, sauce will start to thicken.
- As it cooks add ALL spices and seasonings, mix as you add each spice, so spices will be evenly distributed through the sauce and no clumps will form.
- Reduce heat to low and continue to stir while cooking and all the sauce to reduce and thicken for about 5 more minutes.
Assembly
- Place one or two warm buttered biscuits onto a plate and scoop your desired amount of gravy and pour over the top of your biscuits and Enjoy!
