  • Total Time: 55 minutes

Ingredients

Units Scale

Seasoning the Pork

  • 4lbs Pork Tenderloin
  • 1 Tbsp Oil (I use canola or Olive oil)
  • 1 tsp Black Pepper
  • 2 tsp Onion Powder
  • 1/2 tsp Ground Oregano
  • 2 tsp Cumin
  • 1 Tbsp Garlic Salt

For the Sauce

  • 16 oz of Hot Hatch Green Chili (frozen or fresh roasted)
  • 6 C Water
  • 2 tsp Onion Powder
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Garlic Salt
  • 1/2 tsp Ground Oregano
  • 1 Tbsp Ground Cumin
  • 1 1/2 tsp Gebhert Brand Chili Powder
  • 2 Russet Potatoes, peeled, washed and cut into small cubes

To Thicken (slurry)

  • 1/4 C Cornstarch
  • 1/3 C Water

Optional Garnishes

  • I love Rice a Roni brand Spanish rice, make it separately.
  • Cilantro
  • Cheese (for me it is a must)

Instructions

  1. Cut the pork tenderloin into 1/2” cubes, add oil to the pot and turn stove top on to medium-high heat.
  2. Add the meat and seasoning to the pot and brown it.  (Pro Tip: Meat does not have to be cooked through, just browned)
  3. Add the green chili and water to the pot.
  4. Add all remaining seasoning to mixture. (Pro Tip: While adding seasoning, stir constantly to avoid clumping of the seasoning)
  5. Cook on medium heat for 30 minutes.
  6. While cooking, wash, peel and cut potatoes into 1/2” cubes and add into pot.
  7. In a small bowl, mix the cornstarch and water together with a spoon until smooth. Then add to chili mixture, constantly stirring while adding. (Pro Tip: Important to stir while pouring the cornstarch mixture into the pot and continue to stir for a full 60 seconds.  It will prevent the mixture from settling to the bottom and sticking.)
  8. Turn heat to low and simmer for another 20 minutes to blend the flavors, stir occasionally.

Prepare your bowl

  1. Add a scoop of rice to the bottom of your bowl and pour the soup over the top.
  2. Garnish with cheese and ENJOY!
