S’mores Biscoff Cookies
Satisfy your sweet tooth with our delicious Smores Biscoff Cookies. Made with a twist on the classic campfire treat, these cookies are the perfect summertime indulgence.

For the Cookie Dough
- 1 C Butter, softened
- 1 C Smooth Biscoff Cookie Butter
- 1 C Packed Light Brown Sugar
- 2 Lg Eggs
- 2 tsp Vanilla
- 2 2/3 C All Purpose Flour
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 6 Biscoff Cookies, crushed
For The Topping
- 24 Large Marshmallows, cut in half
- 48 Hershey Kisses, unwrapped
- 1/3 C Melting Chocolate wafers, for drizzling
Instructions
- Preheat oven to 375°F.
- Cut each marshmallow in half and set aside.
- Unwrap Hershey kisses and set aside next to the marshmallows.
- In a medium bowl, cream the butter, cookie butter and sugars until smooth and light.
- Add in eggs and vanilla and mix until just combined.
- Mix in the flour, baking soda, baking powder, crushed Biscoff cookies, and salt and mix just until the flour is blended.
- Using a small cookie scoop(about 1 tbsp), and scoop even size dough balls and place them on a parchment lined cookie sheet and place in freezer for 10 minutes.
- Remove from freezer and transfer to a greased cookie sheet and bake for 9 minutes (check them at 8).
- Turn oven to the boil setting and allow to get hot.
- Top each cookie with 1 cut up marshmallow and place back in the oven for 30 seconds to a minute to brown the marshmallow. This process doesn’t take long, so make sure you are constantly watching so they don’t burn. The marshmallow will expand in this process, don’t be alarmed.
- Immediately after removing them, place a Hersheys kiss in the center of the cookie.
- Allow the cookies to cool before transferring them to a wire rack to cool.
- After all the trays of cookies are complete, melt chocolate wafers in a microwave safe dish, stirring every 10-15 seconds until melted. You can also use a double broiler.
- Drizzle melted chocolate over the cookies, let completely cool and ENJOY!
Notes
The melting wafers I use is the Ghiradelli Melting wafers (affiliate link), they melt so easy and taste delicious but you can you use brand you prefer.
I also prefer Jet Puffed Brand Marshmallows (affiliate), they are delicious are are not grainy at all.
