Irresistible Red Velvet Cake Pops – Easy, Moist & Perfectly Sweet

Ingredients

For the Red Velvet Cake

  • 1 C Sugar
  • 1/2 C Butter, melted
  • 1 Lg Egg, room temperature
  • 1 1/2 tsp Vanilla extract
  • 1/2 C Buttermilk
  • 1 oz Red Food Coloring
  • 1 1/8 C Cake Flour
  • 1 TBSP Cornstarch
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 TSPB Cocoa Powder
  • 1/4 C Hot Fresh Brewed Coffee
  • 1 C Cream Cheese Frosting
  • 1 1/2 C White Chocolate, melted
  • 40 Sticks

Instructions

  1. Re-heat oven to 350°F but then turn down to 325°F right before baking.
  2. Cream together butter and sugar on high for 3 minutes, until light and fluffy.
  3. Add one egg at a time and mix between additions.
  4. In a separate bowl combine vanilla buttermilk and food coloring and set aside.
  5. In a medium bowl sift the flour, corn starch, baking soda, baking powder, salt, cocoa powder and set aside.
  6. Alternate adding the flour mixture and buttermilk mixture, mixing between each addition. Start and end with the flour.
  7. Finally, add the HOT coffee and stir gently into the batter, DO NOT miss this step.
  8. Spray two 9” Cake pans with cooking spray and divide the cake batter evenly between the two pans.
  9. Place into pre-heated oven for 15 minutes or until inserted toothpick comes out clean.
  10. Remove from oven and while hot place into a bowl and add the frosting and mix well until the dough comes together.
  11. Scoop even sized balls and roll them on a cookie sheet.  I measured mine and they were 22g per cake pop.
  12. Place into the freezer for 30 -60 minutes.  You want them cold not completely frozen.
  13. Remove from freezer and set aside.
  14. Melt the white chocolate in 30 second increments in the microwave until completely melted.
  15. Dip the end of the stick in the white chocolate and insert it into the cake ball and repeat for the remaining cake pops.
  16. To make it easy, pour the white chocolate into a tall glass.
  17. Take each assembled cake pop and dip them into the white chocolate and place upside down on the parchment paper and allow to dry.
  18. Decorate how you would like and ENJOY every bite!
