Ingredients

  • 4 C White Rice, day old rice works best
  • 2 Lg Eggs, scrambled
  • 4 Slices Bacon
  • 1 C Carrots,chopped
  • 1/2 C Frozen Peas
  • 1 C Onion, diced
  • 1 Jalapeño, diced
  • 2 TBSP Olive OIl
  • 2 Garlic Cloves, minced
  • 1 TBSP Toasted Sesame Oil (Optional)
  • 1/2 C Soy Sauce
  • 1/2 tsp Garlic Salt
  • Salt and Pepper to taste

Instructions

  1. Brown the slices of bacon in a fry pan over medium heat, crumble and set aside.
  2. Dice the onion and Jalapeño and set aside.
  3. Chop the carrots and set aside.
  4. In a small skillet, scramble the eggs until there is no liquid remaining and set aside.
  5. In a large skillet, combine the olive oil, carrots, jalapeños, and frozen peas and sauté over medium heat until they are bright in color and start to soften.
  6. Add the onion and continue to sauté until onion is translucent.
  7. Add garlic and continue to cook until fragrant.
  8. Add rice to skillet and brown it slightly, about 5 minutes.
  9. Add soy sauce, garlic salt and pepper and mix until sauce is evenly distributed.
  10. Add more salt if needed or desired.
  11. Serve and ENJOY!
