For the Crust

  • 2 C Butter, room temperature
  • 4 C Flour
  • 1 C Powdered Sugar
  • 1 tsp Salt

For the Lemon Layer

  • 2 Eggs
  • 2 1/2 Tbsp Lemon Juice
  • 1 C Sugar
  • 1/8 C flour plus 2 Tbsp
  • Powdered Sugar, for tipping

Instructions

For the Short Bread Cookie

  1. Pre-heat oven to 375°F 
  2. In a large bowl combine softened butter, flour, powdered sugar, salt and mix together until it forms a dough.  Dough can be crumbly, so I use my hands to mix because the heat from my hands warms up the dough more.
  3. Roll into 1” balls and place them 2” apart on a greased cookie sheet.
  4. Make a hole in the center, that doesn’t go all the way through the dough and repeat for the remaining dough balls and set aside.

For the Lemon Layer

  1. In a small bowl, combine eggs and lemon juice and whisk together.
  2. Add the sugar, flour and mix with a hand mixer to ensure that there are no lumps from the flour.

Assembly

  1. Carefully add the lemon mixture into the hold you made into the dough, being careful not to overfill.
  2. Place into the oven for 8-9 minutes.
  3. Remove from oven and sprinkle powder sugar over the top of each cookie and ENJOY!
