For the Crust
- 2 C Butter, room temperature
- 4 C Flour
- 1 C Powdered Sugar
- 1 tsp Salt
For the Lemon Layer
- 2 Eggs
- 2 1/2 Tbsp Lemon Juice
- 1 C Sugar
- 1/8 C flour plus 2 Tbsp
- Powdered Sugar, for tipping
Instructions
For the Short Bread Cookie
- Pre-heat oven to 375°F
- In a large bowl combine softened butter, flour, powdered sugar, salt and mix together until it forms a dough. Dough can be crumbly, so I use my hands to mix because the heat from my hands warms up the dough more.
- Roll into 1” balls and place them 2” apart on a greased cookie sheet.
- Make a hole in the center, that doesn’t go all the way through the dough and repeat for the remaining dough balls and set aside.
For the Lemon Layer
- In a small bowl, combine eggs and lemon juice and whisk together.
- Add the sugar, flour and mix with a hand mixer to ensure that there are no lumps from the flour.
Assembly
- Carefully add the lemon mixture into the hold you made into the dough, being careful not to overfill.
- Place into the oven for 8-9 minutes.
- Remove from oven and sprinkle powder sugar over the top of each cookie and ENJOY!
