- 1 Croissant, cut in half length wise
- 2 Lg Eggs
- 1/8 C Mexican Style Shredded Cheese
- 2 Pieces Bacon, cooked
- 1 Slice of Pepper-jack cheese, cut in half
- Salt and Pepper to Taste
Instructions
- Spray a small fry pan with cooking oil and set aside.
- Cut the already made croissant lengthwise and set aside.
- Prepare the bacon according to the instructions on the package and enjoy.
For The Eggs:
- Crack the eggs into a small bowl, sprinkle with salt and pepper and mix with a fork, until blended.
- Turn the stove-top to medium heat and pour the egg mixture in the pan.
- Use a wooden spoon and scramble the egg as they cook.
- Add the shredded cheese right before the eggs are done cooking and are light and fluffy.
- Remove from heat and get ready to assemble your sandwich.
Assemble The Sandwich
- Warm up in a toaster oven or microwave, until warmed, leave in the opened position on a plate.
- Add the eggs evenly on the croissant, then the bacon, then then pepper jack cheese.
- Place the top of the croissant back on and melt the cheese in the microwave for 10-15 seconds and ENJOY!
