Ingredients

Scale
  • 1 Croissant, cut in half length wise
  • 2 Lg Eggs
  • 1/8 C Mexican Style Shredded Cheese
  • 2 Pieces Bacon, cooked
  • 1 Slice of Pepper-jack cheese, cut in half
  • Salt and Pepper to Taste

Instructions

  1. Spray a small fry pan with cooking oil and set aside.
  2. Cut the already made croissant lengthwise and set aside.
  3. Prepare the bacon according to the instructions on the package and enjoy.

For The Eggs:

  1. Crack the eggs into a small bowl, sprinkle with salt and pepper and mix with a fork, until blended.
  2. Turn the stove-top to medium heat and pour the egg mixture in the pan.
  3. Use a wooden spoon and scramble the egg as they cook.
  4. Add the shredded cheese right before the eggs are done cooking and are light and fluffy.
  5. Remove from heat and get ready to assemble your sandwich.

Assemble The Sandwich

  1. Warm up in a toaster oven or microwave, until warmed, leave in the opened position on a plate.
  2. Add the eggs evenly on the croissant, then the bacon, then then pepper jack cheese.
  3. Place the top of the croissant back on and melt the cheese in the microwave for 10-15 seconds and ENJOY!
