Moist Chocolate Cake with Chocolate Buttercream Frosting
Deliciously moist chocolate cake with chocolate buttercream frosting. You will delight in this amazingly light, perfectly sweetened chocolate cake.

Ingredients

- 1 C Melted butter
- 2 C Sugar
- 2 Lg Eggs, room temperature
- 1 TBSP Vanilla
- 1 C Buttermilk
- 2 C Flour
- 2 TBSP Cornstarch
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 3/4 C Cocoa Powder
- 1 tsp salt
- 1/2 C HOT Fresh Brewed Coffee (or HOT water)
For the Chocolate Buttercream
- 1 Stick butter, softened
- 1/2 C Unsweetened Cocoa Powder
- 2 1/2 C Powdered Sugar
- 1/4 C Milk
- 2 tsp Vanilla
Instructions
- Pre-heat oven to 350°F but then turn down to 325°F right before baking.
- Grease and dust 2 9” cake pans and set aside.
- Cream together butter and sugar on high for 3 minutes, until light and fluffy.
- Add one egg at a time and mix between additions.
- In a separate bowl, combine vanilla, buttermilk and set aside.
- In a medium bowl sift the flour, cornstarch, baking powder, baking soda, salt, and cocoa powder and set aside.
- Alternate adding the flour mixture and buttermilk mixture, mixing between each addition. Start and end with the flour.
- finally, add the HOT coffee, continuously stirring while adding. DO NOT miss this step.
- Divide the batter evenly between the two already prepared pans.
- Bake at 325°F for 30-40 minutes or until toothpick comes out clean. DO NOT over bake.
- If you choose to do cupcakes bake at the same temperature for 18-20 minutes, checking at the 18 minute mark.
For the Frosting
- In a medium bowl combine butter, vanilla and milk and mix until smooth.
- Sift in powdered sugar and unsweetened cocoa powder and mix until smooth and light in texture.
Assembly:
- Place one cake layer on the serving tray.
- Spread a generous amount of frosting on top.
- Add the second cake layer, frost top and sides of cake with remaining frosting.
- Cut, serve and lick the plate!
