Old Fashioned Yellow Cupcakes with Chocolate Buttercream

Absolute perfection!  Old fashion yellow cake cupcakes with whipped chocolate frosting is the best way to silence your sugar craving.  This is a super moist, spongy, flavorful cake that everyone will love!

Ingredients

  • 2 1/2 C Flour
  • 2TBSP Corn starch
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 4 eggs – room temperature
  • 1 C buttermilk – room temperature
  • 1 C Butter – softened
  • 2 C Sugar
  • 1 tbsp vanilla
  • 1 batch of our Chocolate Buttercream Frosting
  • Cupcake Liner

Instructions

  1. Pre-heat oven to 350°F
  2. Get your cupcake pan out and line it with your favorite cup cake liners and set aside.
  3. In a medium size bowl, sift the flour, cornstarch, baking soda, baking powder and salt and set aside.
  4. In a glass measuring cup, combine the buttermilk and vanilla, stir until combined, set aside.
  5. In a large bowl whip the softened butter and sugar until light yellow and fluffy (about 3 minutes).
  6. Add eggs one at a time, mixing until just combined inbetween additions.
  7. Start by adding 1/3 of the flour mixture to the butter mixture, mix until just combined.
  8. Then alternate by adding 1/2 of the buttermilk mixture, until just combined.  
  9. Repeat until the last of the flour is combined.
  10. Carefully spoon batter just over half way into cupcake liners, do not over fill.
  11. Place in pre-heated oven for 15-18 minutes, checking at the 15 minute mark.  Remove from oven when an inserted toothpick comes out clean.  —DO NOT over bake.
  12. Transfer to wire rack to cool for 1 hour before adding any frosting.
