For the Pie Crust:

  • Use this recipe for a flakey, flavorful pie crust OR use a store bought pie crust.

For the Filling:

  • 8 fresh Peaches, peeled and sliced thinly
  • 1/4 C Granulated Sugar
  • 1/4 C Brown Sugar
  • 2 tsp Vanilla
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1 tsp Fresh Lemon Juice
  • 2 tsp Corn Starch

Streusel Crumb topping:

  • 3/4 C Quick Oats
  • 3/4 C Flour
  • 1/2 C Brown Sugar, packed
  • 1/2 C Butter, melted

Instructions

  1. Follow the directions to make the pie crust or purchase a premade pie crust from the store.  Prep your pie pan with the dough according to the directions in the recipe.
  2. Optional: For additional flavor, I love to brush the crust with 1 tbsp of melted butter and sprinkle a light layer of cinnamon sugar over the crust and set aside.

For the Filling:

  1. Pre-heat oven to 400°F.
  2. Peel, pit and slice peaches and place in a large bowl.
  3. Combine sugars, cinnamon, vanilla, nutmeg, lemon juice and cornstarch until well combined.
  4. Allow to Marinade for at least 10 minutes while you make the crumb topping.

For the Crumb Topping:

  1. In a medium sized bowl combine the oats, flour, and brown sugar.
  2. Melt the butter in the microwave and pour over the flour mixture and mix with a fork until the butter is completely distributed.  It will form medium sized clumps.

Pie Assembly:

  1. Pour peach mixture into the prepared pie crust and spread evenly.
  2. With your hands, evenly spread out the all of the crumble topping over the top of the peaches.

Cooking:

  1. Place into the oven at 400°F for 45-50 minutes.
