Ingredients

  • 2 C Flour
  • 1/4 C Sugar
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 tsp Salt
  • 1 tsp Ground Cinnamon
  • 2 Lg Eggs
  • 2 tsp Vanilla
  • 2 C Buttermilk

Instructions

  1. In a medium size bowl, combine flour, sugar, baking powder, baking soda, salt and cinnamon.
  2. Add 2 eggs, buttermilk and vanilla into the flour mixture and mix with a whisk until smooth.
  3. Heat a large skillet over medium heat and spray with cooking spay.
  4. Use 1/4 c scoop and scoop the mixture onto your skillet.  You can cook one at a time or if you cook more, make sure there is 2-3 inches between each to allow the pancakes to spread and raise as they cook.
  5. Cook each side about 2-3 minutes or until bubbles form and pop but the batter doesn’t fill the hole back in (hopefully that makes sense).
  6. Use a flat spatula and flip the pancakes to cook the other side.  I love to butter the top while cooking.
  7. After golden brown, take off the heat and transfer to a plate to eat while hot.
  8. Repeat with the rest of the batter.
  9. Top with your favorite pancake toppings like, peanut butter, fruit, Nutella or simple butter and syrup and ENJOY!
