- 2 C Flour
- 1/4 C Sugar
- 1 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1 tsp Salt
- 1 tsp Ground Cinnamon
- 2 Lg Eggs
- 2 tsp Vanilla
- 2 C Buttermilk
Instructions
- In a medium size bowl, combine flour, sugar, baking powder, baking soda, salt and cinnamon.
- Add 2 eggs, buttermilk and vanilla into the flour mixture and mix with a whisk until smooth.
- Heat a large skillet over medium heat and spray with cooking spay.
- Use 1/4 c scoop and scoop the mixture onto your skillet. You can cook one at a time or if you cook more, make sure there is 2-3 inches between each to allow the pancakes to spread and raise as they cook.
- Cook each side about 2-3 minutes or until bubbles form and pop but the batter doesn’t fill the hole back in (hopefully that makes sense).
- Use a flat spatula and flip the pancakes to cook the other side. I love to butter the top while cooking.
- After golden brown, take off the heat and transfer to a plate to eat while hot.
- Repeat with the rest of the batter.
- Top with your favorite pancake toppings like, peanut butter, fruit, Nutella or simple butter and syrup and ENJOY!
