- 2 C Sweet Potatoes, cooked and mashed
- 2 Eggs
- 1/2 C Butter, melted
- 1/2 C Brown Sugar
- 1/2 C Granulated Sugar
- 1/2 tsp Nutmeg
- 1/2 tsp Cinnamon
- 1/4 tsp Salt
- 3/4 C Evaporated Milk
- 2 tsp Vanilla
Cinnamon Sugar mixture
- 2 TBSP Granulated Sugar
- 1 TBSP Brown Sugar
- 1 tsp Cinnamon
Homemade Whipped Cream
- 1 C Heavy Whip Cream, very cold
- 1/4 C Sugar
- 1 tsp Vanilla
Instructions
- Make the pie crust or use a store bought version and line your baking pan with the dough and poke holes in the dough with a fork to help prevent bubbling.
- Brush the pie crust with about a tablespoon of melted butter and sprinkle an even light layer of the cinnamon sugar mixture over the crust and set aside.
- Preheat oven to 350°F
- Cut and clean the sweet potatoes and boil them until fork can be inserted easily, then remove from water and mash them or mix with a hand mixer until creamy.
- In a large mixing bowl combine the mashed potatoes with the melted butter, eggs, sugars, spices, vanilla and evaporated milk and combine until smooth.
- Pour over prepared crust and bake in oven for 45-50 minutes or until toothpick comes out clean.
- Allow to rest for 10 minutes before serving and ENJOY!
For the homemade whipped cream:
- In a small mixing bowl add the heavy cream, sugar and vanilla and mix with an electric mixer until the cream forms stiff peaks, about 3 – 5 minutes.
