Ingredients

Scale
  • 2 C Sweet Potatoes, cooked and mashed
  • 2 Eggs
  • 1/2 C Butter, melted
  • 1/2 C Brown Sugar
  • 1/2 C Granulated Sugar
  • 1/2 tsp Nutmeg
  • 1/2 tsp Cinnamon
  • 1/4 tsp Salt
  • 3/4 C Evaporated Milk
  • 2 tsp Vanilla

Cinnamon Sugar mixture

  • 2 TBSP Granulated Sugar
  • 1 TBSP Brown Sugar
  • 1 tsp Cinnamon

Homemade Whipped Cream

  • 1 C Heavy Whip Cream, very cold
  • 1/4 C Sugar
  • 1 tsp Vanilla

Instructions

  1. Make the pie crust or use a store bought version and line your baking pan with the dough and poke holes in the dough with a fork to help prevent bubbling.
  2. Brush the pie crust with about a tablespoon of melted butter and sprinkle an even light layer of the cinnamon sugar mixture over the crust and set aside.
  3. Preheat oven to 350°F
  4. Cut and clean the sweet potatoes and boil them until fork can be inserted easily, then remove from water and mash them or mix with a hand mixer until creamy.
  5. In a large mixing bowl combine the mashed potatoes with the melted butter, eggs, sugars, spices, vanilla and evaporated milk and combine until smooth.
  6. Pour over prepared crust and bake in oven for 45-50 minutes or until toothpick comes out clean.
  7. Allow to rest for 10 minutes before serving and ENJOY!

For the homemade whipped cream:

  1. In a small mixing bowl add the heavy cream, sugar and vanilla and mix with an electric mixer until the cream forms stiff peaks, about 3 – 5 minutes.
