Toffee, Almond, Chocolate Chip Cookies

Ingredients

  • 1 C Salted Butter, room temperature
  • 3/4 C Granulated Sugar
  • 3/4 C Light Brown Sugar
  • 2 Large Eggs
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1 tsp Vanilla
  • 2 1/3 C All Purpose Flour
  • 1/2 C Heath Toffee Chips
  • 1 C Sliced Almonds

Instructions

  1. Preheat oven to 350°F
  2. In a medium bowl, bring butter to room temeerature – very important not to melt the butter.
  3. Add sugar to butter and cream the mixture.
  4. Next, add eggs vanilla and mix well.
  5. Add baking soda, salt and 2 cups of the flour and mix until incorperated.
  6. Slowly add the last third of a cup. You want the dough to but soft but not sticky.
  7. Add almonds, toffee and chocolate chips and mix until evenly distributed.
  8. Scoop tablespoon sized amounts and roll into a ball with your hands. Alternatively, if you have a cookie scoop use the one tablespoon size and place 2 inches apart from each other on a greased cookie sheet.
  9. Bake for 8 minutes and ENJOY!

Notes

  • Pro-Tip #1 – The most important thing for this recipe is that you must only soften the butter, do NOT melt it. I like to pull the butter from the fridge early and let it sit on the counter until it is at room temperature.
  • Pro-Tip #2 – When the dough is finished it should not be super sticky. If it is too sticky, add a touch more flour and mix well.
