Easy bacon, egg & cheese breakfast sandwich with fluffy scrambled eggs and melty cheese on toasted bread—ready in minutes and full of flavor!

Ingredients

  • 2 Slices of Bread
  • 2 Slices of Bacon, cut in half
  • 2 Lg Eggs, scrambled
  • 1 Slices Provolone Cheese
  • 1/4 C Shredded Cheese, Mexican blend

Instructions

  1. Cook the Bacon:  In a small pan over medium heat, fry the bacon until golden and crispy.  Set it on a paper towel to drain the grease.
  2. Scramble the Eggs: Crack eggs into a bowl, add salt and pepper, and whisk well. Pour into a greased pan and scramble until fully cooked (no runny parts).  Remove from heat and set aside.
  3. Prep the Bread: Butter one side of each bread slice.
  4. Build the Sandwich:  In a skillet, place one slice of bread butter side down.
  5. Layer on the shredded cheese, scrambled eggs, bacon, provolone cheese, then top slice of bread, butter side up.
  6. Grill the Sandwich:  Cook for 2-3 minutes until the bottom is golden brown, flip and cook the other side until golden and melts.
  7. Serve and ENJOY: Remove from the pan, slice if you’d like and enjoy that melts crispy goodness.
