  • 8oz shredded Colby jack cheese
  • 8oz Shredded Pepper jack Cheese
  • 3oz Shredded Asiago cheese
  • 3oz Shredded Gruyere Cheese
  • 8oz Sharp Cheddar Cheese
  • 1/2 C Butter
  • 1/2 C Flour
  • 1lb Elbow Pasta
  • 1 1/2 C Whole Milk
  • 2 1/2 C Half and Half
  • 2 TBSP Louisiana Hot Sauce
  • 1 tsp black pepper
  • 1/2 tsp Cajun Seasoning
  • 1 1/2 C Panko Crumbs
  • 2 TBSP Olive Oil
  • 1 tsp Garlic Salt

Instructions

  1. Using a cheese grater, shred all the cheeses.  Put all the different cheeses in a large bowl and set aside.
  2. Get a large pot and boil the elbow macaroni as the instructions on the box say. Strain the macaroni when cooked and put it back in the pot.
  3. Put milk in a container for the microwave and heat it for 3 minutes.
  4. In a large pan on medium heat, melt the butter then add the flour and stir until it’s like a paste.
  5. Whisk in the hot milk and bring to a boil. Reduce sauce until it thickens, then add seasonings, hot sauce and 3/4 of the shredded cheese.  Stir until the cheese melts.
  6. Remove from heat and pour over the elbow macaroni.
  7. Put the mixture in a casserole dish, layer with some shredded cheese, then pour the rest of the mixture on top and spread evenly. Sprinkle the remaining cheese over it.
  8. In a small bowl, mix the panko crumbs, oil and garlic salt. Sprinkle that over the macaroni. Cover with foil and bake for 30 minutes. Take off the foil and bake for 10 more minutes. If the crumbs have not started to brown, turn the oven to broil for 1.5 minutes, watching closely so it doesn’t burn. Then enjoy!
