These homemade oatmeal cream pies are a nostalgic treat made from scratch—soft, chewy oatmeal cookies sandwiched with a light and fluffy vanilla cream filling. Better than store-bought and easy to make, this classic snack cake is perfect for lunchboxes, parties, or a sweet anytime indulgence.

 

Ingredients

Scale
  • 1 C Butter, softened
  • 1 C Dark Brown Sugar, packed
  • 1/2 C Sugar
  • 2 Eggs
  • 1 TBSP Vanilla
  • 1 tsp Cinnamon
  • 1 TBSP Molasses
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 3 C Oats, quick 1-minute oats
  • 2 C Flour

Instructions

  1. Pre-heat oven to 350°F
  2. In a large bowl, cream together butter and sugars.
  3. Add eggs and mix again until just combined.
  4. Add molasses, vanilla, cinnamon and mix again.
  5. Add oats and mix again.
  6. Then add flour, baking soda and salt and mix until fully combined.
  7. Scoop 1” – 1 1/2” balls and place on a cookie sheet about 2” apart.
  8. Bake for 8-10 minutes, remove from oven and allow to cool on the cookie sheet for another 10 minutes then transfer to a wire rack.
