These homemade oatmeal cream pies are a nostalgic treat made from scratch—soft, chewy oatmeal cookies sandwiched with a light and fluffy vanilla cream filling. Better than store-bought and easy to make, this classic snack cake is perfect for lunchboxes, parties, or a sweet anytime indulgence.
Ingredients

- 1 C Butter, softened
- 1 C Dark Brown Sugar, packed
- 1/2 C Sugar
- 2 Eggs
- 1 TBSP Vanilla
- 1 tsp Cinnamon
- 1 TBSP Molasses
- 1 tsp Salt
- 1 tsp Baking Soda
- 3 C Oats, quick 1-minute oats
- 2 C Flour
Instructions
- Pre-heat oven to 350°F
- In a large bowl, cream together butter and sugars.
- Add eggs and mix again until just combined.
- Add molasses, vanilla, cinnamon and mix again.
- Add oats and mix again.
- Then add flour, baking soda and salt and mix until fully combined.
- Scoop 1” – 1 1/2” balls and place on a cookie sheet about 2” apart.
- Bake for 8-10 minutes, remove from oven and allow to cool on the cookie sheet for another 10 minutes then transfer to a wire rack.
