This Ube Cheesecake is rich, creamy, and full of that signature nutty-sweet flavor and stunning purple hue ube is known for. Made with real ube halaya or ube extract, it’s a Filipino-inspired dessert that’s as beautiful as it is delicious. - 32 oz Philadelphia Cream Cheese, room temperature
- 1/2 C Sugar
- 3/4 C Plain Greek Yogurt
- 1/2 C Ube Hayala
- 1 TBSP Ube Extract
- 2 tsp Vanilla Extract
- 3 Lg Eggs, room temperature
For the Crust
- 3 sleeves Oreos, crushed
- 1/2 C Butter, melted
Whipped Cream
- 1/2 C Heavy Cream
- 1/2 tsp Vanilla
- 1/8 C Sugar
Instructions
- Pre-heat oven to 350°F.
- Crush the Oreos, put into a small bowl, add melted butter and mix with a fork until the butter is completely distributed.
- Line the bottom of a 9” spring pan with a piece of parchment paper.
- Pour the crumb mixture into the pan and press them down to the bottom and up the sides, pressing until firm and even. Set aside.
- In a large bowl cream the cream cheese nail there are no clumps.
- Add yogurt, sugar, Ube hayala, Ube extract, and vanilla extract and mix well until creamy
- Add eggs one at a time mixing between additions.
- Pour into the prepared pan and wrap the bottom and the sides of the pan with a piece of tin foil and place into preheated oven for 90 minutes.
- Allow to cool at least 2 hours, I usually make it the day before any event that I am having and let it rest in the fridge overnight.
Make the Whipped Cream
- In a small bowl, combine heavy cream, sugar and vanilla.
- Mix in mixer on high until stiff peaks form.
- Add to Cheesecake right before you are ready to serve and ENJOY!
